5 minute omelette or scrambled eggs

Love eggs but no time to add fresh veggies in your busy morning routine?

Here is and easy way to prep a protein and nutrient-packed breakfast, lunch or dinner!

Ingredients:

  1. 2 eggs
  2. 4 tablespoons Lyoca freeze-dried vegetable mix
  3. left over rotisserie chicken or ham (optional)
  4. 2 tablespoons grated cheese (option)
  5. salt an pepper to taste
  6. 1 tablespoon vegetable oil

Crack two eggs in a bowl and beat with a fork. In a pan, pour the vegetable oil and warm until it covers the pan. Pour egg mixture into the hot pan. Add the rest of the ingredients. Let cook 1-2 minutes until you are able to flip the omelette onto itself, creating a half moon or just stir for scrambled eggs! Cook until desired doneness. Enjoy!
